Raisin And Honey Pancakes is a delicious whole wheat flour pancake recipe made with buttermilk, raisins and honey. Something tasty, sweet and an easy make recipe for quick and easy weekday breakfasts!

Preparation Time: 10 minutes

Refrigeration Time: 45 minutes

Cooking Time: 30 minutes

Serving: 10

Ingredients:

  • 200 g whole wheat purpose flour (or all purpose)
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 5 tablespoons honey
  • 2 tablespoons oil
  • 3 tablespoon chopped raisins
  • 3 tablespoon chopped cashew nuts
  • 3 tablespoon chopped almonds
  • 2 eggs
  • 1 cup (250 ml) low fat milk
  • 1 tablespoon powdered sugar
  • ½ lemon
  • 1 tablespoon butter

Instructions:

1. Combine the flour, baking soda, powdered sugar, cinnamon powder in a bowl . This forms the dry ingredient mix.

2. Whisk the whole egg in a separate container till fluffy.

3. Add milk and 2 tablespoons of honey to it and whisk again to make a smooth batter.

4. Heat Butter in a Fry Pan.

5. Add the Chopped Nuts and after 30 seconds add chopped raisins in it.

6. Remove the mixture from the heat when it turn golden. Transfer it in a bowl.

7. Pour the Egg Milk Mixture to the Dry Ingredient Mix at 1 and mix it well. Cover with plastic wrap and let the batter rest for approximately 45 minutes.

8. Add the raisins and nut mix to the above batter at 7, mix well.

Note: Avoid Formation of Lumps by stirring continuously

9. Using a brush, lightly oil a non-stick frying pan and heat. For each pancake, pour a small ladleful of the batter into the pan and cook over a medium heat for  2 to 3 minutes on each side.

Note: Put the gas on low flame

10. Check for color by slightly lifting the sides of the pancake.

11. Flip when golden brown and cook on both the sides. Remove from heat and cover the pancakes with a tea towel to keep warm.

12. Squeeze the half lemon. Heat the lemon juice and honey in a small saucepan for 2 minutes, stirring continuously. Serve the pancakes hot, drizzled with the lemon- flavoured honey.

Tip: The pancakes can be cooked the day before and reheated in a frying pan.

Bonus:  Serve with Hot coffee or fresh cream.
